Garlic Scape Pesto

Makes 16 Servings
Pesto is the kind of ingredient that is great to have on hand. It adds a rich flavor to so many dishes - from pasta and ravioli to soups and meats. Adding garlic scapes to pesto adds a not-so-subtle yet pleasant garlicy flavor. Plus, it’s a great way to use fresh seasonal produce.

12 garlic scapes, trimmed and cut into 1-inch pieces

1 cup packed basil leaves

¾ cup extra virgin olive oil

½ cup grated Parmesan cheese

½ cup walnuts

½ teaspoon kosher salt

Freshly ground black pepper

  1. Place the scapes, basil, olive oil, cheese, walnuts, and salt in the bowl of a food processor and process until smooth. Season with pepper to taste. Scrape down the sides of the food processor with a rubber spatula as needed.

Tip: Toss a tablespoon or two of pesto with about a cup of cooked pasta, ravioli, or tortellini and enjoy. Save what you don’t use by placing leftover pesto in ice cube trays. Spread a layer of plastic wrap over the top (this will reduce discoloration), and freeze.
